Egg and lactose free vegan pancakes
This is one of our favorite recipes, and the only way we make our pancakes! They are simple to make, healthy to eat, and they taste better than anything you’ve ever tried..
Timing and servings

- bake time: 40 min
- feeds/serves: 3 people
Ingredients:
- 1 tbsp. – vanilla sugar
- 1 tbsp. – oil of your choice
- dash of salt
- 1 tsp. – baking powder
- 2 tsp. – Chia seeds previously soaked in water (1 tsp. equals 1 egg)
- 2 cups – flour mix of your choice
- ½ cup – Rice milk
- 1½ cup – fresh water
Preparation:
Find yourself a large empty bowl, or if you are using mixer with bowl included, use that one. First pour in soaked chia seeds and ad some water.
Turn on the mixer and start mixing. Ad rice milk, vanilla sugar, dash of salt, baking powder, and oil of your choice, while constantly mixing it. Mix it for one minute, than slowly start adding first cup of flour mix. After mixing it all in add water, and start adding the second cup of flour mix. Mix it well, so you can’t see any flour parts, and consistency should be about the same as oily wall paint..
If it is denser, just add some water, if other way around, add flour..
Heat frying pan on medium fire and grease it with coconut butter or any other oil. Pour in the base so that you cover the whole pan. When sides start curling upside, flip it on other side. Repeat process few times until pancakes are golden brown. Eat them, or put toppings or fillings of your choice
